中国向けの黒毛和牛の輸出が再開されました。
その時、何がおこるのでしょう(・・?
まず輸出の中心になるのは
高級黒毛和牛のロースとヒレ。
ロースとヒレの価格高騰は避けられないでしょう。
問屋さん曰く
「現在の倍くらいになるのでは」
恐ろしい話です。
『貴』セット シャトーブリアン 15000円。
注文していただけますか?
（街で食べれば、現在でもこのくらいの価格はしますが）
輸出量が順調に伸びれば
供給量も遅れて伸びてきます。イヤイヤ伸びてください。
でも売れるのは、ロースとヒレのみ。
その他のバラやモモ肉は・・・・・
国内でだぶつく可能性も出てきました。
国内市場において
ロース系が入手できなければ
モモ系に矛先が向けられます。
モモ系の需要が増え、一時的に価格が上昇しても
和牛自体の供給量が追い付いてくれば
価格は安定、その後徐々に下落なんて
楽観的な予想ならぬ、希望も。
なんとか商いを続けられますように・・・・・
輸出再開から2，3年の和牛相場は天井知らず
その後、落ち着きを取り戻すも
高級和牛のロースとヒレは、日本の食卓から姿を消し去る。
高級和牛は輸出用。
国内需要は、安価な輸入牛に依存。
そんな構図が当たり前になってしまうのでしょうか。
とにかく、輸出再開後の和牛相場は過去最高額を記録しそうです。
そして、それがいつまで続くのか。
商売を続けられるのか、続けられなくなるのか。

We will not be able to avoid the soaring prices of lib eyeroll and tenderloin.
Retailers say, " These prices will be double ore more...."
Terrible!
Now, Kachoshi price of Chateaubriand (tenderloin) set is 6,800. Then it will be 15,000 in future....
Would you still order one even so?
(If you order tenderloin in another restaurant, it costs about 15,000 yen, though)
If the amount of export increase, the amount of supply will increase accordingly, but slowly.
Even so, only lib eyeroll and tenderloin sell well.....
How about other part of the beef?
There may be in abundance in Japan.
In Japan market, if a buyer cannot get lib eye or tenderloin, they tend to buy thigh parts.
Then the demand of thigh parts may increase, lifting the price of them temporally.
But if the supply of Wagyu catch up with the demand, the price might be stable, and go down little by little.....
Just I am trying to be optimistic and imagining the brighth future.....
I sincerely hope we can continue this Wagyu business for long.
